Blackberries and Mango Clafoutis was what I had for breakfast last weekend. Man, I feel so proud of myself when I eat breakfast on rare occasions! Although I know it's important and it will fuel me until lunch time, and helps me to focus etc, I am used to skipping breakfast. It's bad, I know. You see, I am not a milk drinker. So the milk+ granola combo that most people eat for breakfast doesn't work for me. And fruits? No, they help in digestion, and probably will make me hungrier than full later on. How about bread? Yes. I ate that for 13 years while growing up, so No thanks. Normally, a cup of coffee is all I have for breakfast.

To rectify the situation, I try to make something that would pique my interest for breakfast on weekends. Pancakes work for awhile, then it lost its appeal. This month, thanks to Bron, who is hosting the latest round of Hay Hay It's Donna's Day, I am reminded that clafoutis is perfectly acceptable for breakfast. And I should bake a batch before I miss the deadline again! Oh, I am terrible at keeping deadlines. Or other important dates/numbers in general.

Although I enjoy eating cherry clafoutis, they are just not available this time of the year, (depressing, I know). Instead, I spied some mangoes and blackberries on sale in the grocery store. Not entirely sure if the two would go well together, I know there's just one way to find out- whipping up a batch myself. Which I clearly did. The lovely thing about this clafoutis batter is, it is highly adaptive. It works for cherries, plums and berries + mango! Now I have a recipe for blackberries & mango clafoutis! I topped the clafoutis with chopped pistachio, which added a nice contrasting texture and flavor to the clafoutis.

I love it, I am now a good girl who eats her breakfast! (on weekends :p) So do you eat breakfast ? What do you eat for breakfast everyday? I need some inspiration here.



Blackberries and Mango Clafoutis
adapted from Ceres and Bacchus

3 eggs
1/2 cup sugar
1/2 cup butter, melted
1 cup all purpose flour
1 cup milk
1/2 tsp. vanilla
2 6 oz pack blackberries
1/2 sweet mango, diced (you can use more mango and less berries too)
some chopped pistachios


Preheat the oven to 400 F. With a mixing bowl, beat the sugar and eggs with a wire whisk until they turn lighter in color. Gradually add in the melted butter, beating to incorporate. Add the flour all at once and whisk until the batter is a homogeneous mixture.

Slowly pour in the milk and vanilla,whisking to combine. The batter should be very smooth and shiny.

Distribute the berries and diced mango in 7 disposable aluminium dishes,(or you can also use a buttered glass or earthenware baking dish, cake pan (9 or 10 inches in diameter) or skillet, as the original recipe suggests). Pour the batter over the fruit. Bake for approximately 20-30 minutes (longer if you can using a bigger pan), until slightly browned and almost completely set in the middle. Serve warm, at room temperature or cold. (I baked them at night, had one before sleep and another one for breakfast the next morning.)

Top some chopped pistachio on the clafoutis before serving.

Make 7 individual size clafoutis for weekend breakfast.

Looks like a great breakfast to me...I've been doing a slice of bread with some peanut butter lately...so boring! would love blackberry and mango together! yummy!

I think this post marks the first time I've actually looked at pictures of clafoutis & thought..."I want to make that some time". They look delicious...comforting.

For breakfast I eat oatmeal often...the real kind, with cinnamon & dried cherries from Trader Joe's. Simple, but yummy. I can't stand the instant kind. Oh, and scones. Yum!

Wow, very nice recipe... I made clafoutis with blackberries as well, in ramekin dishes... adding mango is such a good idea, I will try next time. Here is my recipe:

It was really yummy... but I had to sprinkle over icing sugar for children, for me it was ok without extra sugar... adding sweet mango would be really great idea.

Alright.I confess. I do not mind having one of these clafoutis for breakfast dessert after.. maybe... Nasi Lemak.

I'm **really** into breakfast (and this looks like it could be a fab addition!). I switch it up a lot. I like hot cereal in the winter (oatmeal, cream of wheat, oat bran), and other times of year I have cereal or granola with *yogurt* and honey instead of milk. The past few days I've eaten slices of homemade whole wheat bread with this goat cheese/honey/lemon spread I bought at Whole Foods... Oh, and whole grain toaster waffles with peanut butter or honey for a treat!

That looks so good. I have a daughter who I am always fighting to get her to eat breakfast. She would love this. Normally I just make a smoothie with yogurt, fruit, etc. for her

I wasn't one for breakfast for a long time either; however clafoutis, new takes on porridge/oatmeal, 'oeufs en cocotte', serving my yoghurt and homemade muesli/granola in *special* sundae glasses has changed all that, I LOVE breakfast now. Taking the effort to make it a special meal in whatever way suits you, remember we all eat with our eyes and our soul first, hehe... so yes anyway - I totally understand why cold milk and bought cereal isn't attractive at all!!

Oh girl- I SO know where you are coming from. I am a recovering breakfast shunner. I am proud to say I have been eating breakfast every morning for almost 6 months now.
What worked for me was broadening my horizons. I also dislike milk and fruit on an empty stomach gives me a tummy ache. I now eat nuts and cheese for breakfast (with a latte, of course). It's small and simple and I can eat it on the go.
But i've been noting these clafoutis lately and am thinking you guys are on to something...

I'm not a breakfast eater either, more or less for the same reasons you've named, so maybe I could try your delicious clafoutis, which I could then have with my tea again and for dessert again later and for a snack at five and...and..

Blackberries and mango are fabulous together and so are those clafoutis! I actually make a quick crumble with them by adding a
mixture of rolled oats, sugar, cinnamon, coconut, and almonds then broil them for a few minutes.

As for breakfast inspiration, I'm an oatmeal girl. But I also love breakfast egg sandwiches, yogurt, granola, and fruit bowls, and peanut butter and banana sandwiches with honey. I'm going to post about breakfasts tomorrow if you're interested. :)

ah ha, sounds like me. I am good at skipping breakfast too, I don't know why. Often my hubby tell me it is not good skipping bf which it is become my normal life.
anyway, blackberies and mango are good together. Love them both!!

Mandy, I made my firt clafoutis yesterday! With mango and mixed berries, drawing my inspiration from your recipe! I used a slightly different batter from another food blog, but the idea of combining mango with berries comes from you blog! Thank you for sharing and being such an inspiration!
